Cedar & Ember started with a secondhand cast-iron drum, a backyard fire, and a stubborn idea: that coffee should taste like the place and the people it came from. In 2014 we set up our first roaster in a drafty workshop off Mill Street and learned the rhythms of heat and airflow one scorched batch at a time.

Ten years on, we still roast every bag within a mile of where you're reading this. We buy green coffee from growers we've met in person, roast in batches small enough to taste as they go, and rest each one long enough to matter.

Cedar Hollow

The coffee that started it all, and still the one we reach for first. Cedar Hollow is a medium roast built for the long, unhurried morning — balanced, forgiving, and endlessly drinkable. We marry washed beans from the highlands of Huila with a sun-dried natural lot from Ethiopia to land somewhere between comfort and curiosity, with notes of red apple, brown sugar, and a soft floral lift on the finish. It brews beautifully across every method we've tried: rich and syrupy pulled as espresso, clean and aromatic through a pour-over, round and mellow from a French press. This is the bag that lives on our own kitchen counters, the one we press into the hands of friends who swear they "don't really like coffee," and the one our regulars carry out two at a time. We roast it just to the edge of second crack and rest it a full four days before it ever reaches your cup.

A bright, delicate light roast — jasmine, white peach, and a twist of lemon zest. Best as a slow pour-over that gives the florals room to open up.
